Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 pound petite potatoes
- Salt, to taste
- 2 teaspoons garlic powder
- 1 teaspoon Italian seasoning
- Freshly cracked pepper, to taste
- 2–3 tablespoons fresh chopped herbs, such as thyme, rosemary, basil and/or tarragon
Instructions
- Move an oven rack to the middle position and preheat to 425°F. Place a large baking sheet in the oven.
- In a large bowl, toss the petite potatoes with the olive oil, salt, garlic powder and Italian seasoning until evenly coated.
- When the oven is preheated, spread the potatoes in a single layer cut side down on the hot baking sheet. Return to the baking sheet and roast for 15 minutes. Stir or toss the potatoes and return to the oven to cook for 10 minutes more until the potatoes are golden brown and crisp on the outside and tender on the inside.
- Transfer to a serving platter and garnish with freshly cracked pepper and fresh herbs. Enjoy!
