Ingredients
  

  • 1 ⅓ cup of Barlow's Original Pancake Mix
  • 1 cup milk
  • 1 cup sweet potato cooked and mashed
  • ¼ cup butter melted
  • 1 egg
  • 1 tablespoon brown sugar
  • 1 teaspoon vanilla
  • ¼ teaspoon cinnamon
  • teaspoon nutmeg
  • Walnuts or pecans for garnish (optional)
  • Maple syrup or honey for drizzling (optional)

Instructions
 

  • In a bowl, mix all dry ingredients and whisk until evenly combined. Add milk, melted butter and vanilla and whisky to combine.
  • Add sweet potato and mix until well combined.
  • Heat a griddle or well-oiled pan to medium low and ladle about 1/2 cup of batter at a time into the pan. Cook until small bubbles form in the batter and the pancake is beginning to turn a golden shade on the bottom (about 3-4 minutes on medium-low heat). Flip the pancake and repeat.
