Ingredients
  

  • 3 ounces baby spinach washed and thoroughly dried
  • 2 ounces arugula washed and thoroughly dried
  • cup red onion thinly sliced
  • ¼ cup cucumbers thinly sliced
  • ¼ cup shaved parmesan
  • 2-3 tablespoons pine nuts
  • Fresh basil for garnish (optional)
  • Sea salt and freshly cracked pepper to taste
  • 1 serving Lemon Basil Vinaigrette

Instructions
 

  • Place the arugula and spinach in a large bowl. Add the cucumber and red onion and toss gently to combine the ingredients. Top with pine nuts.
  • Drizzle with Lemon Basil Vinaigrette or your favorite salad dressing. Garnish with fresh basil, salt and pepper, to taste.
