Tender roasted carrots with fresh dill and crumbled goat cheese – this Roasted Dill Carrots recipe is a fresh and flavorful side dish that comes together in less than 30 minutes.
Move your oven rack to the middle position and preheat to 425 degrees F. Scrub your carrots clean. Add parchment paper (optional) to a rimmed baking sheet. If using fresh dill, ensure it has been washed and dried. Chop the fresh dill and set aside.
Drizzle the extra-virgin olive oil over the carrots and sprinkle with a dash of sea salt. Toss to combine and spread the carrots evenly across the parchment paper-lined baking sheet in a single layer. Roast at 425 degrees F for 25 minutes.
Transfer the carrots to a serving dish, garnish with crumbled goat cheese and dill, top with freshly cracked black pepper. Serve immediately and enjoy!
