Ingredients
  

  • 1.5 cups cherry tomatoes quartered
  • 2 cups cucumber diced
  • ¼ cup feta cheese crumbled
  • 2 tablespoons fresh dill
  • 2 teaspoons red wine vinegar
  • 2 teaspoons extra-virgin olive oil
  • sea salt and freshly cracked pepper to taste

Instructions
 

  • In a large bowl, combine the prepared tomatoes, cucumbers, crumbled feta cheese and fresh dill.
  • In a small bowl, whisk together the red wine vinegar and extra-virgin olive oil. Drizzle the dressing over the salad and toss gently to combine. 
  • Garnish with salt and pepper, to taste. Enjoy!

Notes

This recipe is also wonderful with diced red onion and extra herbs, such as parsley and basil. Add brightness with a spritz of fresh lemon juice.
