Ingredients
  

  • 1 large grapefruit peeled and white pith removed
  • 1 cup fresh strawberries washed and hulled
  • ½ cup Greek yogurt
  • 1 cup plain low-fat kefir
  • 1-2 tablespoons pure unfiltered honey
  • ½ cup unsweetened coconut water
  • Ice
  • Unsweetened shredded coconut for garnish (optional)

Instructions
 

  • Prepare the produce and measure out the remaining ingredients. This is the most important step for a sweet, not bitter, smoothie! Using a paring knife, carefully remove all the tough, bitter white pith (the spongy white layer under the peel) and all the seeds. Breaking the grapefruit into segments before adding it to the blender can also help ensure all the pith is removed. Next, wash and hull the fresh strawberries by rinsing them under cool water and removing the green tops (hulling them). Measure out the Greek yogurt, kefir, unsweetened coconut water, and honey.
  • Prepare any smoothie add-ins you plan to use. This is an optional step.
  • In a high-powered blender (we love our Vitamix Propel for how well it does the job) combine all ingredients except shredded coconut and blend until smooth. Add unsweetened coconut water as needed.
  • Taste the grapefruit smoothie and adjust the sweetness and thickness, as needed. Pour the smoothie into two 16-ounce glasses or four 8-ounce glasses and serve immediately.

Notes

  • Grapefruit tends to be bitter. Make sure your grapefruit is peeled well with any seeds removed and the white pith removed to the best of your ability.
  • Choose ruby red or pink grapefruits, which lean on the sweeter side.
  • If your smoothie is still too bitter for your tastebuds, add honey and/or pineapple chunks.
