Roasted Radishes with Goat Cheese and Honey

Radishes are in season in spring, and this recipe for roasted radishes makes for an stunning spring side dish. Bonus that it’s super easy!

Ingredients

  • 16 ounces radishes, stemmed and halved or quartered
  • 1/2 cup purple onion, julienned
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon unfiltered organic honey
  • 1/4 cup goat cheese, crumbled
  • 12 tablespoons fresh thyme

Instructions

  1. Preheat your oven to 425 degrees F. While the oven heats up, prep your radishes and onions then throw them into a large bowl, add the extra-virgin olive oil and toss to combine.
  2. Spread the mixture evenly on a baking sheet and roast for for 15 minutes. I like to serve these radishes with a semi-firm texture, but roast for an extra 5-10 minutes for softer texture.
  3. Transfer the roasted radishes and onions to a serving dish, drizzle with honey, crumble the goat cheese on top and garnish with fresh thyme. Serve warm.

Notes

Honey goat cheese and herbed goat cheese are also delicious in this recipe.
