- 1/4 cup white wine vinegar
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- 1 garlic clove
- 1/4 cup mixed fresh herbs
- 1 teaspoon fresh lemon juice
- 4 tablespoons light oil, such as extra-virgin olive oil, grapeseed oil or avocado oil
- Fresh cracked pepper, to taste
Instructions
- In a small vegetable chopper, puree the first six ingredients (through lemon juice) until herbs and garlic are finely chopped and the liquid is emulsified. Add the remaining ingredients and pulse until creamy, about 30-45 seconds.
