Ingredients

  • 3 ounces baby spinach, washed and thoroughly dried
  • 2 ounces arugula, washed and thoroughly dried
  • 1/8 cup red onion, thinly sliced
  • 1/4 cup cucumbers, thinly sliced
  • 1/4 cup shaved parmesan
  • 23 tablespoons pine nuts
  • Fresh basil, for garnish (optional)
  • Sea salt and freshly cracked pepper, to taste
  • 1 serving Lemon Basil Vinaigrette

Instructions

  1. Place the arugula and spinach in a large bowl. Add the cucumber and red onion and toss gently to combine the ingredients. Top with pine nuts.
  2. Drizzle with Lemon Basil Vinaigrette or your favorite salad dressing. Garnish with fresh basil, salt and pepper, to taste.
  3. Enjoy this spinach arugula salad immediately.
