- 3 ounces baby spinach, washed and thoroughly dried
- 2 ounces arugula, washed and thoroughly dried
- 1/8 cup red onion, thinly sliced
- 1/4 cup cucumbers, thinly sliced
- 1/4 cup shaved parmesan
- 2–3 tablespoons pine nuts
- Fresh basil, for garnish (optional)
- Sea salt and freshly cracked pepper, to taste
- 1 serving Lemon Basil Vinaigrette
Instructions
- Place the arugula and spinach in a large bowl. Add the cucumber and red onion and toss gently to combine the ingredients. Top with pine nuts.
- Drizzle with Lemon Basil Vinaigrette or your favorite salad dressing. Garnish with fresh basil, salt and pepper, to taste.
