Ingredients

  • 1.5 cups cherry tomatoes, quartered
  • 2 cups cucumber, diced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh dill
  • 2 teaspoons red wine vinegar
  • 2 teaspoons extra-virgin olive oil
  • sea salt and freshly cracked pepper, to taste

Instructions

  1. In a large bowl, combine the prepared tomatoes, cucumbers, crumbled feta cheese and fresh dill.
  2. In a small bowl, whisk together the red wine vinegar and extra-virgin olive oil. Drizzle the dressing over the salad and toss gently to combine. 
  3. Garnish with salt and pepper, to taste. Enjoy!

Notes

This recipe is also wonderful with diced red onion and extra herbs, such as parsley and basil. Add brightness with a spritz of fresh lemon juice.
