- 1.5 cups cherry tomatoes, quartered
- 2 cups cucumber, diced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons fresh dill
- 2 teaspoons red wine vinegar
- 2 teaspoons extra-virgin olive oil
- sea salt and freshly cracked pepper, to taste
Instructions
- In a large bowl, combine the prepared tomatoes, cucumbers, crumbled feta cheese and fresh dill.
- In a small bowl, whisk together the red wine vinegar and extra-virgin olive oil. Drizzle the dressing over the salad and toss gently to combine.
- Garnish with salt and pepper, to taste. Enjoy!
Notes
This recipe is also wonderful with diced red onion and extra herbs, such as parsley and basil. Add brightness with a spritz of fresh lemon juice.
